MINI FRITTATAS TO-GO

Olive oil spray

12 eggs

¼ cup milk

Salt and pepper to taste

2 tsp fresh dill (optional)

¼-½ c shredded cheese

¼ cup parmigiano-Reggiano

Optional: Meat-- Ham, bacon or sausage (Veggies chopped spinach, broccoli, onion)

Directions:

1. Preheat oven to 375 F and Spray 12-cup muffin tin with olive oil

2. In large mixing bowl, whisk eggs, milk, and seasonings

3. Pour eggs into muffin tin and fill ¾ to the top (using a ladle makes this easy)

4. Sprinkle cheeses and toppings on top of each muffin cup

5. Bake until puffed up about 12-15 minutes


Store and heat up as like-- Great protein breakfast or snack!
