15- Minute creamy avocado pasta
1 pkg uncooked pasta
2 garlic cloves
¼ cup fresh basil leaves
4-6 tsp fresh lemon juice
1 T extra-virgin olive oil
1 ripe avocado
½ tsp sea salt
Fresh ground pepper
In a food processor or blender combine garlic and basil and pulse to mince.
Add lemon juice, oil, avocado and 1 T water and blend until smooth, stopping to scrape down the bowl as needed. If the sauce is too thick, add more water as needed. Season with salt and pepper
Drain pasta and put back in the pot and add the avocado sauce and stir until combined.
Top with fresh basil, tomatoes, parmesan, salt and pepper.
