Creamy Avocado Pasta

The avocado is one of the most nutrient-dense foods available. Avocado was the first solid food I fed my kids when they were babies. Ounce for ounce, they are among the richest in fiber, folate, potassium, vitamin E, and magnesium among all fruits. This nutrition profile makes it a worthy Superfood.

15- Minute creamy avocado pasta

1 pkg uncooked pasta

2 garlic cloves

¼ cup fresh basil leaves

4-6 tsp fresh lemon juice

1 T extra-virgin olive oil

1 ripe avocado

½ tsp sea salt

Fresh ground pepper

  1. Cook pasta

  2. In a food processor or blender combine garlic and basil and pulse to mince.

  3. Add lemon juice, oil, avocado and 1 T water and blend until smooth, stopping to scrape down the bowl as needed. If the sauce is too thick, add more water as needed. Season with salt and pepper

  4. Drain pasta and put back in the pot and add the avocado sauce and stir until combined.

  5. Top with fresh basil, tomatoes, parmesan, salt and pepper.
